Once the dried grapes for the winery’s Amarone have finished fermentation, a select batch of Valpolicella grapes undergoes a process known as “ripasso,” where they are passed over the Amarone pomace. This results in a brief second fermentation. The outcome is a refined and concentrated wine that is exceptionally smooth and velvety, featuring vibrant red fruit aromas. On the palate, it presents fruity flavors complemented by elegant tannins, with notes of chocolate and spice. Ripassa has been crucial to the evolution of Zenato winery over the years.
